Mike Simone has developed some custom MiSTer cores that output composite and s-video natively. I go over how to set these cores up.

Initial release batch of #MiSTerFPGA cores with YC / Composite added. List: Atari 5200, Atari 7800, Sega MS, Sega GG, Sega Genesis, SegaCD, NES, SNES, NEOGEO, TG16/CD, PSX (Beta) https://t.co/znw7lp70pN These builds work with both the analog board and direct video out of HDMI*

Using direct video is tricky right now and I would advise against it until there is a cleaner option. It also requires a HDMI to VGA adapter (with an AG6200 chip), and you need to follow the same steps as you would when trying to get YPbPr out of direct video. (E.g. Hsync is req)

Composite works as well, you just need the right cable for it. https://t.co/aZWCQ75EbZ Though I will be working on a simple breakout board that adds an additional luma trap to improve composite on consoles like genesis.

Keep in mind that Mike Simone is also creating an adapter that will give you better image quality and you wont need these below cables:
